Vacuum distillation cooling or cold distillation is a process used in the production of spirits and is something that has been embraced by many of the premium gin brands who are leading the way when it comes to innovative distillation techniques.
Traditionally when producing gin, a mixture of neutral grain spirit and selected botanicals are heated to around 78°C. The downside to this method is that the heat can affect the botanicals, the mix can become overheated which damages the delicate components and therefore affects the overall aroma and flavour of the final product.

Typical Products Used In The Food And Beverage Industry
With cold distillation, a vacuum is created which then reduces the point at which the alcohol can be distilled. Standard cold distillation can bring this “boiling” point down to between 24-40°C. The reduction in temperature protects the delicate botanicals and enhances the flavour of the gin.
The cold distillation concept was further enhanced and in 2007 “sub-zero distillation” was born which effectively takes the distillation, or “boiling” point, down to as low as -13°C. This ensures the botanicals retain their real flavours which is crucial to artisan gin producers.

Gin Crafting Process
At the beginning of the gin crafting process, selected botanicals are macerated in grain spirit at room temperature. After a time, this mixture is put into a vessel and the pump pulls the air and vapours from the distillation container, reducing the air pressure and causing evaporation at a lower temperature. The higher the vacuum, the colder the temperature at which the aromatics and alcohol can be distilled and subsequently less damage to the flavours.
As the vapour molecules move into the condenser, they move against the cold tubes which are cooler than the condensation point of the vapour, turning it back into liquid. Vacuum distillation techniques like the above are also used in specific chemical and pharmaceutical processes.
